RUBS


ADAM PERRY LANG'S SPICE RUB
Ingredients:
1 tsp. Chile Flakes
1 Tbsp. Coriander Seed
1 Tbsp. Cumin Seed
1 tsp. Cardamom
1 Tbsp. Dried Mint Leaves
1 tsp. Dried Ginger
1 Tbsp. Black Peppercorns
1 cup of Salt
Directions:
Lightly toast first six spices in a pan over medium heat until fragrant. Grind through finest setting on spice mill or pulse lightly in coffee grinder until fine and set aside.
Lightly toast black peppercorns in a pan over medium heat and pound in mortar and pestle until cracked and coarse. Mix into spice blend and set aside.

Combine all with salt, working in with fingers. Seal in air tight container.

KANSAS CITY DRY RUB
1/2 cup brown sugar
1/4 cup paprika
1 tbsp black pepper
1 tbsp salt
1 tbsp chili powder
1 tbsp garlic powder
1 tbsp onion powder
Combine all ingredients in a jar and shake.

Store in an airtight container.

FETTE SAU DRY RUB
1/3 cup garlic powder
1 1/2 Tbsp ground cumin
2 1/3 cup dark brown sugar
1 Tbsp cayenne pepper
1/4 cup ground cinnamon
2 cup ground coffee (espresso grind)
2 cup kosher salt
1/2 cup ground black pepper

MICKEY'S COFFEE RUB
1/4 cup salt
1/2 cup brown sugar
1/2 cup ancho-chili powder
1/2 cup expresso ground (very fine) Coffee. (Medaglia D'oro instant expresso - available at TARGET)
1/4 cup garlic powder
1/4 cup ground black pepper
Mix all and keep in an air tight container.
BEEF
Dirty Dalmatian
1 *part Kosher salt
3 parts course black peppa
1 part Mrs Dash Lemmon Peppa (contains no salt)
*parts can be any measurement
3:1 Peppa - salt is by volume if using weight then 1:1

PORK
Blu's Pork Rub for the BBQ Challenged
1 4 oz bottle Sweet Paprika
1/2 a 4oz bottle Sugar( what ever kind you have)
1/2 a 4 oz bottle of Kosher salt
1 Teasp celery salt
1 Teasp Granulated onion
1 Teasp Granulated garlic
1 Table sp Mrs Dash Lemon pepper
1/2 tsp (or to taste) Cayenne pepper
1 Teasp Ginger
1 Teasp mustard powder

CHICKEN
BBQ Chicken Rub
Morton salt Co
Ingredients
4 Tbsp Morton ® Kosher Salt
1 Tbsp Ground Black Pepper
1 Tbsp Garlic Powder
½ tsp Cayenne Pepper
2 Tbsp Brown Sugar
3 Tbsp Paprika
1 Tbsp Chili Powder
Directions MIX all ingredients in a bowl.
RUB seasoning onto meat, 2-3 Tablespoons per pound of chicken or as desired.
BAKE, BROIL or GRILL as preferred.
STORE remaining rub mixture in airtight container.
Makes about ½

SIMPLE RUB
Simple cooking is all about making smart choices. High- impact ingredients like citrus zest and spices make for short ingredient lists AND full-on flavor. Rub this citrusy coriander mix over your favorite protein to brighten up your next meal.
4 teaspoons finely grated lemon zest (from 2 lemons)
2 tablespoons finely grated orange zest (from 2 oranges)
2 teaspoons ground coriander
1 teaspoon ground pepper
In a small airtight container, combine lemon zest, orange zest, coriander, and pepper. Cover and shake well to combine. To store, refrigerate, up to 1 week.

FRANKLIN'S RIB RUB
(as best as I could determine from watching Aaron Franklin's Rib Video)
Easy and very delicious.
1/2 cup Coarse Ground Pepper
1/4 cup sea salt
2 Tblsp Chili Powder
1 Tblsp Paprika
1 Tblsp Onion Powder (coarse grained)
1 Tblsp Garlic Powder (coarse grained)
Eliminate the salt if your ribs are brined.

BUBB RUBB (FOR PORK BUTTS)
3 tbsp kosher salt
3 tbsp paprika
2 tbsp brown sugar
1 tbsp garlic powder
1 tbsp dried mustard

RIB RUB
3 tbsp paprika
2 tbsp kosher salt
2 tbsp brown sugar
1 tbsp garlic powder
1 tbsp dried mustard
1 tbsp ginger

TRI-TIP RUB
1 tbsp kosher salt
1 tbsp paprika
1 tbsp garlic powder
2 tsp black pepper
1 tsp cayenne pepper

BRISKET RUB
2 tbsp kosher salt
2 tbsp brown sugar
2 tbsp paprika
2 tbsp chili powder
1 tbsp white pepper

BRISKET :
Coarse ground pepper
Kosher salt
Paprika
Cayenne
Red chili flake
Dash chile powder
Garlic powder
Onion powder
