SMOKED CHICKEN QUARTERS WITH RED POTATOES AND GREEN BEANS

Haven't posted in a while so I got a few pictures of a great dish in a 17x9 cast iron pan. The recipe is very simple, just layer the items being cooked, put it on the smoker and remove the chicken when its done and put the potatoes and beans back on the heat until they are done.

This is the picture of the layers before I added the chicken. I sliced up three lemons and after rubbing down the pan with butter, I laid the lemon in the bottom. Next I cut up eight red potatoes and lined the pan with them. If I have small new potatoes I just quarter them but these were a little large and so I cut them several times.


I put the chicken quarters on top and added salt and pepper. The next time I did this dish I put a few tablespoons of olive oil, some worcestershine sauce, garlic powder, onion powder, and red pepper flakes in  a large bowl and mixed the potatoes, and beans in mix. After I layered the potatoes and beans I put the chicken in the bowl and covered them with the mixture. This browned the chicken better I think,



I smoked this chicken at about 300 degrees for about an hour. The internal temperture was 165. I removed the chicken and put the pan of potatoes and beans back in the smoker for another 35 minutes.
