BABYBOOMERBOY'S MEATLOAF

Decided to make some meatloaf for supper. I picked out about three or four recipes that looked good and then combined them into my own creation. Below is the result.

I started with
1.5 LBS hamburger
1.5 LBS ground pork sausage
1 LB bacon
3/4 cup of bread crumbs
3/4 cup milk
2 eggs
1 red onion
1 green bell pepper
1 red bell pepper
2 cloves of garlic
1/2 cup brown sugar
1/2 cup ketchup
2 TBS lemon juice
2 TBS sea salt
2 TBS black pepper
1 TBS brown mustard
1 TBS worcestershine sauce
1 tsp rosemary
I mixed everything together and set aside. I then sprayed my roaster pan with PAM and laid in the bacon
I then filled the roaster with the meatloaf mix
I folded the bacon over the top of the meatloaf and made a little bit of a bacon weave
I then put some Simply Marvelous Cherry Rub on the top of the bacon
I took the meatloaf to an internal temperature of 160 and then rested it for 30 minutes. I didn't get a picture of it when it was finished because we were hungry. Anyway, I think it come out pretty good.
